Stuffed Eggplant With Hulled Grains

 

Ingredients:

2Tbs. olive oil

I large onion, chopped

I large tomato, chopped

2 of lobes minced garlic

l green pepper, chopped

l yellow pepper, chopped

3 eggplants cut in halves, and hollowed out

I teaspoon paprika

1/2 teaspoon turmeric

l teaspoon salt

1/2 teaspoon black pepper

l  1/2 cup of drenched hulled grains

2Tbs. chopped parsley

l cup tomato sauce

 

How to Prepare:

In a saucepan, stir-fry eggplants and onions with olive oil until it turns light golden, then set aside.

In the same saucepan stir-fry onions with garlic then add green and yellow pepper, and then add the hulled grains with the spices. Add a cup of water to the mixture and leave it until cooked. Add chopped parsley and stir all well together. Pour tomato sauce in a tray and stuff eggplants with the mixture of hulled grains. Add the stuffed eggplants to the tray with tomato sauce then bake for 40 minutes until cooked.
