Rich Italiano’s One Pot Penne Pasta with Chicken and Mushroom

Delicious comfort food that is also light does exist! This one pot recipe is as easy as it is succulent and filling.


1 pack Italiano penne pasta

3-4 tablespoons olive oil

2 garlic cloves, minced

2 chicken breasts, cut into cubes

½ cup fresh mushrooms

Juice of one lemon

¼ cup grated parmesan

½ cup parsley, chopped

Salt and pepper to taste


Heat the olive oil in a pot and add the chicken, stirring and turning until the chicken cubes are golden brown on all sides. Add the mushroom and wait until soft before adding the garlic, stir everything together until the garlic is fragrant. Add pasta and enough water to cover everything evenly, season well and cover partially. Lower heat medium to medium-low and cook until all water has evaporated and pasta is al dente. Then turn off the heat and add the lemon juice and parsley. Garnish with parmesan before serving.
