The Ultimate Christmas Dinner Menu

 

During this time of the year, the wonderful smell of Cinnamon, star anise and citrus fruit fills the house. It is Christmas!! Potato soup, honey glazed turkey, and orange spiced cake make the best Christmas eve dinner ever.

 

 

 

 

Honey Glazed Turkey Breast 

 

Ingredients:
1 turkey breast (1.5 to 2kg)
1/4 cup honey
3 tablespoon soy sauce
2 tablespoon ground star anise
Salt and pepper

 

Directions:
Preheat the oven to 180 degrees. Place the turkey breast in a roasting pan, season with salt and pepper.
In a small bowl, mix together the honey, Soy sauce and star anise. Pour half the glaze over turkey breast and bake it covered with aluminum paper for about an hour and a half. Then remove the cover, and add the remaining glaze over the turkey breast, and bake for about 35 minutes. You may want to add a little water to the pan, if needed.
Remove the turkey breast from the pan, cover it and let it cool for almost an hour, then slice it. Serve it along with the glazing sauce. Enjoy!

 


               

Potato Soup

 

Ingredients:
2 tablespoon butter- drizzle of olive oil
3 stalks spring onion (only the white part) diced
8 medium potatoes, peeled and diced
1/2 teaspoon nutmeg
Salt and freshly ground black pepper
6 cups chicken or vegetable broth
1 cup milk
1/2 cup heavy cream

Directions:
Add the butter and olive oil to the pot over medium heat, then add the onions. Cook for 2 minutes then add the diced potatoes, season with salt and pepper, and stir. Pour in the broth and bring it to a boil. Cook until the potatoes are tender. Add the milk to the soup and cook for a couple of minutes then turn off the heat.

Let the soup cool down. Then blend it in a blender or a food processor until completely silky and smooth. Pour it back into the soup pot and stir to combine. Let it heat back up, check the seasoning, add in the cream, and finally the nutmeg. It is now ready to be served.

 

 

 
Orange Spiced Cake

 

Ingredients:
1/2 cup of butter (at room temperature)
1 cup sugar
1/4 molasses
3 eggs – vanilla
Zest of an orange/ 1/2 cup orange juice
2 cups flour/ 1 tablespoon cinnamon/ 1 tablespoon ground cloves/ 1/2 tablespoon dried ginger/ 1 tablespoon baking powder/ 1/2 tablespoon baking soda/ pinch of salt
1 cup of chopped raisins

Directions:
Preheat oven to 350 degrees F (175 degrees).
Using an electric whisk, mix the butter with the sugar until creamy and fluffy. Then add the molasses and mix again.
Add the eggs one at a time then the vanilla. Add the orange zest and juice and mix until combined.
In a bowl, sift all the dry ingredients together, then add it to the egg mixture, mix well using a spatula and finally add the raisins.
Line a pan with parchment paper, then pour the mixture and bake for 40-50 minutes at 180 degrees or until a toothpick inserted into the center of the cake comes out clean. Allow to cool and serve it.
