Ingredients:
1 onion chopped
1 ½ tablespoons olive oil
4 peeled tomatoes
2 cups chicken broth
½ cup croutons
Oregano
Parmesean
Salt & pepper
Method:
In a medium pot cook onion in olive oil and add salt and pepper to your liking. Stir occasionally over low/medium heat until onions are soft.
Meanwhile blend tomatoes for 30 seconds, making sure it’s still slightly chunky.
Add tomatoes, broth and oregano into pot over the simmering onions; let it simmer until mixture starts to thicken.
Let it cool down, serve in a small bowl, add shredded parmesan and croutons.
