Ingredients to serve 4 portions
1 pack of spaghetti, cooked al dente
500g of pre-washed clams
2 finely chopped onions
5 finely chopped garlic cloves
2 tbsp olive oil
250g cherry tomatoes cut into halves
2 lemons, juiced
4 tbsp chopped parsley leaves
Method
Heat the oil in a deep pan over medium heat. Add the onions and garlic and sauté for 4-5 minutes till they soften. Add the drained clams, 100ml of the boiling spaghetti water, and the chopped tomatoes. Cover and let simmer till all the clams are opened. Add the cooked and drained spaghetti, along with the lemon juice and the chopped parsley. Remove from the heat, season with salt and pepper to taste and garnish with grated Parmesan cheese.
