Bean Tagine with Goulash




Can of fava beans

2 Tbs. olive oil

2 Tbs. tomato paste

2 tomatoes, chopped

I green pepper, chopped

I yellow pepper, chopped

Green onions, chopped

2 lobes of minced garlic

l teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cumin

1/2 roll phyllo

(Egyptian goulash)

Olive oil for frying

How to Prepare:

In a pan, add green onion and garlic and stir-fry with olive oil. Add tomatoes and tomato paste then fava beans and stir all well. Add spices and then pour into a tagine.

Cover the tagine with goulash to form a flower shaped goulash. Apply olive oil on goulash and bake at medium heat in the oven till it turns to golden.
