Adding a new yummy twist to a timeless classic is a surefire way to jazz things up in the kitchen. We especially need that when we run out of ideas, and it’s extra difficult to get kiri-ative with recipes!
That is why we at What Women Want… Magazine collaborated with Kiri and created the #Kiri_ativeChallenge. Our favorite foodies set each other off on deliciously creative adventures, where each foodie received a basket from us at What Women Want… Magazine and Kiri, containing ingredients which they must stick to while creating their all new recipes.
Sarah of @sarahkhanna was challenged by Yasmeen from @bakingandco to come up with a delicious creation that is rich and flavorful. Let’s see how she did it.
Pink Bechamel Moussaka
Ingredients:
2 large eggplants (peeled and sliced)
Kiri cheese (3 squares)
4 small tomatoes (diced)
¼ Kilogram minced meat
1 large onion (chopped)
Stock (1 stock cube diluted in a cup of water)
½ liter milk
2 tbsp flour
4 garlic cloves (minced)
Nutmeg
1 teaspoon thyme
4 tbsp butter
2 tbsp olive oil
2 tbsp tomato paste
1 egg yolk
1 tbsp breadcrumbs
Salt and pepper
Directions:
Heat a few tablespoons of oil with 2-3 tablespoons butter and fry the eggplant slices until golden brown. Remove the eggplants and in the same pan, add the minced meat, salt and pepper, and onion, stir and let cook for a few minutes. When the onions are translucent add the garlic, tomatoes and thyme, stir and let cook until done. Add tomato paste, stir and let cook for one more minute.
To make the bechamel, in a pan add two tablespoons butter and two tablespoons flour on medium heat and whisk to combine. Add the stock and whisk well. Then add salt, pepper and tomato paste. Stir well, then add ½ liter milk, whisking continually to combine. Add three Kiri squares, a sprinkle of nutmeg and the egg yolk and whisk. Keep whisking until it thickens then take off heat.
To prepare the casserole first add a layer of bechamel, then a layer of eggplants, then top with a layer of minced beef. Repeat until done, finishing with a layer of bechamel and top with breadcrumbs. Place into an oven pre-heated to 200 degrees until the to
