This meal is fun to cook with Kids. We cut the carbs in this recipe by mixing the spaghetti with veggie noodles.Try this delicious yet healthy meal with only 400 calories per serving and lots of fibers coming from the zucchini in the spaghetti, so no worries.

Tips:

Baking is healthier than deep frying. in this meal we bake the chicken so it carries less trans fat.

In the Box

1/2 tablespooon thyme

3 garlic cloves

1/2 onion sliced

200 grams tomatoes chopped

3 tablespoon yogurt

30 grams grated parmesan

4 chicken breasts

1/3 cup garlicky panko

4 medium zucchini

60 grams sliced mozzarella

1/4 cup basil leaves

1/4 cup chicken stock

What you need at home?

Olive oil

Salt, pepper

Baking sheet

Oven

Microwave or small

Saucepan

 

  1. Preparation

Preheat oven to 200 degrees.

Heat 1 tablespoon of olive oil in a pan over medium high heat.

 

  1. Cook tomato sauce

Add thyme, garlic, and onions to pan, cook 2 minutes.

1/4 cup of chicken stock and cook for 8 minutes.

 

  1. Prepare the marinade

Combine yogurt and Parmesan, spread over both sides of the chicken, then rub chicken breasts with panko mixture.

  1. Cook Chicken

Place chicken over a rack or a cooking tray, bake at 200 degree for 12 minutes or until done.

  1. Broil mixture

Preheat broiler to high, top each chicken breast with some tomato sauce, top sauce with mozzarella. Broil 2 minutes or until cheese is

melted.

Heat a large pan over high medium heat add 1 tablespoon of oil, swirl to coat add garlic cook for 1 minutes add zucchini cook for 2 minutes remove from heat sprinkle with salt and some basil leaves.

  1. Serve & share

Divide zucchini noodles over plates, add chicken portion sprinkle with basil leaves. Take a picture of your creation and share it using #justcookit
