WWW Cooking in Marriott’s Super-Kitchen

 Marriott Zamalek’s kitchen was recently rebuilt to become the very first eco-friendly kitchen in the Middle East. This is not only great news for the environment, but also for Marriott guests and chefs. The kitchen takes the highest measurements to make sure everything is sanitized from utensils to the food itself. There are separate fridges for different types of food – vegetables, fish, meat, dairy… etc. Each type was stored at the appropriate temperature. The kitchen itself is prepared with pasteurization techniques, ultra violet sanitization, washing stations at every door step and plenty more to ensure the cleanliness of the place. We met up with the Director of Culinary, Chef Badawy Abdelhamid and he told us about the latest addition to the Marriott Kitchen: homemade ice cream and pasta.

Yes, the Marriott kitchen now makes its very own, organic pasta and ice cream. We tried the ice cream, but we had to do something with the pasta. And that’s why we cooked delicious spinach and ricotta ravioli with the chefs there. Here is how to make your own.

Ingredients:

Spinach
Ricotta cheese
Onion
Cream

 Butter
Grated Parmesan
Herbs
Shaved Parmesan
Salt and Pepper to taste
Garlic

Stir fry the spinach with the onion, then allow to cool, then add the Ricotta cheese.

 

Directions:

  • Fill the rolled out pasta sheets and fold into ravioli
  • In a saucepan, heat the butter until melted, add the garlic and cook for about 1 minute, then add the cream and simmer.
  • In a pot of salted boiling water, cook the ravioli until al dente, then put in heated cream.
  • Plate and garnish with greens and shaved Parmesan.

This ravioli was absolutely heavenly. We recommend you make it with Marriott’s pasta, which will be up for sale in the Bakery Shop very soon!
