Healthy can be delicious! Enjoy this Light Vegetable Soup

 

Ingredients:

2 tablespoons vegetable oil

1 chopped carrot

1 chopped onion

1 chopped zucchini

1 chopped potato

Chopped celery

Fresh parsley

2 cups vegetable broth

Salt & pepper

 

Method:

In a medium pot, cook onions in oil until soft, add salt and pepper to your liking.

Add all vegetables except celery, let cook for several minutes on medium heat.

Add vegetable broth and celery; let it simmer until vegetables are soft. You can add water if soup becomes too thick.

Let it cool; serve in small bowl with some garlic bread on the side!
